Golden Fruit Muffins with Whipped Maple Butter & Toasted walnuts

Ingredients

  • 100g butter, softened
  • ½ teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 8 Golden fruit muffins
  • ¼ cup walnuts, lightly toasted and roughly chopped
  • ½ small red onion, sliced

Method

1. Place the butter in a bowl and beat with an electric mixer for several minutes.  
2. Add the vanilla and maple syrup and continue to beat for another 5 minutes until the mixture is light and fluffy.
3. Toast muffins until golden, serve warm with maple butter and a sprinkling of walnuts.
4. Leftover butter can be kept in a sealed container in the refrigerator for several weeks.

Serves 4.
